Remove duplicate Erigon submodule #18

Our repository is presently importing the Erigon submodule twice, once at v3-boba/ergion and again at v3-boba/optimism/op-erigon. We should pick a single location for the submodule and remove the other, along with any modifications to 'go.work' files etc. which might be needed.

Decided to use the v3-boba/optimism/op-erigon path, retiring "v3-boba/erigon".
