The recipients should be the customers (those who have booked the activity).
Example:
I do not think there needs to be support for situations any more complex than described above, such as events that happen sometimes Mondays, sometimes Saturdays, for example as there is no predictable pattern.

It would be great to have an option to "notify customer of date exceptions".
When using the "repeat" tools, the admin chooses which days to have as "exception".
For groups of activities that repeat a lot, and have such exceptions, it would be great if the customer could be notified of such exceptions (if the admin has toggled these notifications on).
I ask customers to check the calendar via "My Account", but sometimes they don't and they forget there is a planned exception (e.g. holiday, break, etc.)
I think this option is only necessary for groups.
