Include information about setting renderer as default #23

Thanks for the pull request. I don't really want to encourage people to monkey-patch the will_paginate method in the README though. Ideally will_paginate would provide a way to set a global renderer option.

But this might be useful as a wiki page - I've just enabled the wiki for this repo & I'll go and add this content there.
