docs: Repositories can be a list #134

Goal: document that a single configuration can have multiple targets configured.

I didn't know that and tried to use loops etc., wasting a few hours 😭 The example below stays as is so it's clear that repositories can be both a list and a single string.

Merged. There is a bug in Molecule right now that breaks our tests.

Sorry this wasn't clear. Those params are passed to Borgmatic, which takes a list of repos.
