doc: update images references in the README #883

add missing references to C.8.x images
improve description of existing images

All descriptions are taken from test-case-structure.json for consistency.

ℹ️ the Java CI with Maven check fails but is not related to the changes proposed here as I only touched the README file 😄 I see the same problem in #882
