Convert the book to Quarto #111

Overview

I want to convert the book to Quarto. There are several separate milestones associated with this. I created this task so that I can add it to the Summer 2024 - Intro to R milestones. I want the book to be fully converted to Quarto before teaching Intro to R in summer 2024.
