Update deps & remove Nodemon #60

Update all deps. No breaking changes with existing app functionality for Node LTS users.

replaces Nodemon with native Node --watch flag
Adds a dependency on Node >18.11.0 (seeing as 20.10.0 is LTS this should be fine)
