ENH: update team members #44

Add Valentina Borghesani as team member.

@jhlegarreta does it make sense to have a single pull request to add all team members listed in #41: might help avoid merge conflicts than opening several PRs at the same time.

Hi I am actually in the outreach and proceedings team (as outreach and DEI have been merged) Could you change that?

@likeajumprope eventhough they are technically different teams in the google doc, in practice they have been one single team so far, so I will merge the 2.

Concerning the proceedings team I have added a comment in this issue: https://github.com/brainhackorg/global2021/issues/41#issuecomment-937554980

Depending on what is decided there I may open another PR to add it on the website.
