This looks good - but I am curious if it would be easier for us to instead checkout the latest released tag, include the countryCode changes on a new branch, release that branch, and not need to worry about the minSDKVersion stuff.

But - either one I'm sure will work 👍

Yeah we thought about that option, but since the last release we updated the gradle files to use a new publishing plugin and wanted to keep that change in there for the release process.
