Testing of styling and functionality for AAA accessibility

Currently the theme is passing using FF's inbuilt accessibility checker in lightmode and darkmode. Just adding this issue as a reminder to check and test after future iterations.

Current concerns:

Contrast between default anchor styling and bg in darkmode (could be changed to default white).
