The current preview deployment of STATv2 deploys a legacy instance of Application Insights.
This is not used in any meaningful way by STATv2, and App Insights can always be added after the fact. The new method for deploying app insights requires a log analytics workspace which adds to the deployment complexity so since we have no use for it right now, we'll leave it out.
