docs: in Dark mode, some code is unreadable #772

We need to clean this up…not sure why it's still looking so wonky.

OK, a bunch of fixes just deployed, and the theme picker was actually broken so that's now fixed. If there are any further readability issues in dark mode, we'll address in new issues.
