User error. If you like, you can delete the issue.
Now I can see in the user-level config that the text is hardcoded. I was initially looking at the config in /etc/conky, which didn't have some stuff I knew I had done before ... so I went looking for the right config. And then I saw the hardcoded text in the right config.
Issue
The display claims the CPU is "AMD Ryzen 5 @ 3.6 GHz" but /proc/cpuinfo says "Intel(R) Xeon(R) CPU E5-1650 v3 @ 3.50GHz". I have no idea where it is getting that info from.
Versions
Config Swiped from the Internet, can't remember exactly where. First config is in /etc/conky, second is ~/.config/conky/conky.conf.
