Deprecate current use of `segmentation` in `workspace` #75

The guidelines for folder structure initially read that assaydev and segmentation could be used interchangeably. In #76 we define a new segmentation folder in workspace so we need to clean up extant datasets to ensure that segmentation folders are renamed to assaydev to comply with the guidelines.

done. (didn't check cpg0016-jump but for reasons it shouldn't have been a problem there)
