Comparing mean vs. median in computing summary #22

Here, I bump the cytominer eval version to one that accommodates mean vs. median summary (see cytomining/cytominer-eval#39).

I calculate grit in the cell health data using both median and mean, plot the results, and rerun the full cell health grit pipeline.
