Remove example_site requirement in prefilter feature config #51

When we update the config files (as part of #47) we should remove the requirement for the user to specify an example site. This is annoying and we can very easily randomly sample a folder name.

Only halfway addressed in #53 - this code fails when not all data are present in the representative example site selected. Full fix incoming
