Pasta with Smoked Salmon and Dill Sauce
From Donna Hay, New Fast Food
Ingedients
400g (14oz) fresh fettuccine or linquine
4 Tbsp Olive Oil
2 Tbsp Lemon Juice
1 Tbsp Salted capers, rinsed
1 Tbsp Whole Grain Mustard
1/2 Red Oinoin, finely sliced
8-10 slices smoked salmon
2 Tbsp Chopped Dille
2 Tbsp Chopped Parsley
Method
Place the pasta in a large saucepan of boiling salted water, cook until al dente
While the pasta is cooking, place the oil, lemon juice, capters, mustard, and onion in a small saucepan over low-mediaum heat. Cook for 2 mins.
Drain the pasta and place on a large serving plate. Toss through the oil and lemon mixture, salmon, dill and parsley.
Serve with lots of cracked black pepper and a salad of baby spinach.
