Tagliatelle with Sausage, Basil and Sun-Dried Tomatoes Mario Batali, Molto Italiano

Ingredients

Method

  1. Bring 6 quarts of water to a boil in a large pot, add 2 Tbsp salt
  2. Meanwhile, in a 10-12 inch saute pan, heat the olive oil over medium heat until hot.
  3. Add the garlic, and cook until light golden brown, about 2 mins. Add the sausage and sund-dried tomatoes and cook, stirring, until the sausage is cooked. About 7-8 minutes.
  4. Drain the fat from the pan, then stire in the tomato paste, wine, and cook for 5 minutes. Remove from the heat and set aside.
  5. Cook the tagliatelle into boiling water and cook until tender. Return and toss all together.
  6. Serve immediately.
