Update beta branch images to include new options and update model install guides #611

Updates the Beta Branch images in the Downgrading section to show new options (1.34.2 and 1.37.1)

Model guides are very outdated, updating them with new info and replacing mentions of ModAssistant with "mod installer".

Note that I have only updated the PC side of guides, as I am not experienced with Quest Standalone.
