Improve project Docker and node specifics

[ ] Add package-lock.json to fix dependencies versions
[ ] Fix Docker image to node:20.12-alpine
[ ] Remove npm i -g npm@latest
[ ] Implement docker multi-stage image build
[ ] Lock node and npm versions with package.json
[ ] Add .nvmrc to support nvm
