Application metrics for monitoring #210

Collect application metrics, expose them to prometheus and visualize them in grafana.

What metrics do we want to track?

[x] connected workers
[ ] active users
[ ] average response time for endpoints
[ ] hours transcribed per hour
[ ] realtime factor for different jobs per worker
[x] queue length (in entries and in time?)

[x] number of documents
[x] number of tasks completed

We should also fix our existing metrics for failed / new tasks. They should not be cummulative. Currently the metrics in our dashboard are kindof useless
