Update the release scripts and documentation for the repo:

remove unnecessary gradle release and nexus staging plugins
add signing plugin
ensure both bugsnag and bugsnag-spring include javadocs in published artefacts
update the release docs in the CONTRIBUTING guide
fix the release date in the changelog
