OpenAPI Generator can not deal with Umlauts

Might be worth checking out if a newer version of the generator does a better job.

Easiest might be a postprocessing job to replace all the umlauts in the openapi.yaml

The only place the original file contains umlauts is the tags, everything else is nicely cleaned up.
