Updating to EXPO 51

As an expo module, please update it to follow expo's versions (yes even if this repo is not maintained anymore, i know). An update should be fast & easy

I second this. This needs to be updated to the latest EXPO. Otherwise, this Plaid Link library you made is difficult to use
