Delete docs directory #27

@mdancho84 Locally, you will need to run usethis::use_pkgdown_github_pages() as the website has not been updated since 1.0.0 https://business-science.github.io/modeltime.ensemble/

Hey! you might wanna add docs to .gitignore to avoid this problem in the future
