Fix react/no unescaped entities eslint errors #58

This PR:

sets the react/no unescaped entities to "error" instead of "off"
fixes the react/no unescaped entities eslint lint errors
partially addresses Fixing eslint rule errors Fixing eslint rule errors Fixing eslint rule errors Fixing eslint rule errors #37

Note: I used [literal characters inside sub-expressions](https://github.com/yannickcr/eslint-plugin-react/blob/master/docs/rules/no-unescaped-entities.md#:~:text=literal%20character%20inside%20a%20subexpression%20(such%20as%20%3Cdiv%3E%7B%27%3E%27%7D%3C/div%3E) because I thought it was more readable.
