Swapping to a newer and more performant package manager.

See Working with monorepos for all changes required in the *apps//metro.config.js** files.
We need to set node-linker=hoisted in the root .npmrc file to allow implicit dependencies within React Native. Unfortunately, there are a lot. But, according to the pnpm docs, this option should work fine for React Native.
Either disable the strict peer deps or add @babel/* to the ignored peer dependency list. This is required due to outdated implicit references to babel.
