I couldn't override the NODE_ENV environment variable for some reason

In which environment? If there are any defaults wouldn't they work?

As discussed over the phone, let's get rid of the TARGET environment variable (reason: it's just an additional layer of complexity).

I've tested these changes against my forked version, works pretty well! 👍
