Update underlying scripts/workflows

Recently, dfm_tools has been upgraded and now contains more generic workflows to:

• download ocean/meteo data (like ERA5 and CMEMS) > motuclient was replaced by opendap
• interpolate regular grid data to bc/pli points (from CMEMS to bc files) > built on xarray and hydrolib
• generate FM inputfiles > built on hydrolib
• post-process FM outputfiles > built on xarray/xugrid (https://github.com/Deltares/dfm_tools/blob/main/docs/notebooks/postprocessing_example.ipynb)

It would be convenient if the underlying scripts/workflows of this usecase can be updated. Including these two notebooks:

It might be that there is still something essential missing, let's discuss if that is the case.
