Document our Slack debugging channels and also name them better #77

We are a little confused about our Slack channels. They need some documentation & can have better names. Also we want to make sure we adjust our output reports to not commit to production channels

Also helpful to include the IDs somewhere we all know where it is - they aren't quickly identifiable.

Actually - we do need, but there is an initiative for this now.
