Clean up organisation of tests and test models #240

Problem description

Test models are not very well organised at the moment.

This includes:

file naming consistency
use of simple models vs fully-blown models
use of overrides/scenarios

Better organised test models could be used as simple example models to demonstrate key functionality and be integrated into the docs, too.

We will be able to simplify the tests substantially with new YAML-based constraint formulation, by unit-testing the functionality rather than each constraint separately
