We should save characters in unicode, like accented vowels in location names

It looks like this is an ERDDAP issue with the program that reads the request. The characters are correctly encoded in the text files written out by polars

Resolved in #70 :partying_face:

No way is this trial and error parsing of mis-encoded characters going to come back and bit me in the ass later
