Fix file permissions and line endings for building stack in Linux #1214

Problems with building using the stack script / docker-compose-build method when using VSCode remoted into WSL and having cloned the repo in that WSL filesystem

e.g.

entrypoints.sh requires executable permissions (for root user probably)
test.txt resource used by the DockerClientTest needs Windows (CRLF) line endings to match the expected test output specified in the test file
