[EPIC] Rename camunda-platform repos #1367

Related to:

This epic is to rename the helm chart, and any referencing CI to camunda-helm instead of camunda-platform-helm.

Overview:

This task is planned for after the 8.5 alpha2 release. And the reason we want to do it is to prevent any miscommunication about what "the platform" means.

### camunda-platform-helm
- [ ] list all places where the git repo and helm repo are used
- [ ] rename the git repo to camunda-helm
- [ ] move charts/camunda-platform to charts/camunda
- [ ] ensure that the new name is used in the official docs
- [ ] ensure that the new name is used in marketing resources like blog posts
- [ ] ensure we communicate the chage part of the 8.5 patch releases blog posts (3 posts at least)
- [ ] ensure that we announce the change part of the 8.6 release blog post
### camunda-platform
- [ ] look at the other epic to understand the motivations: [distribution #42](https://github.com/camunda/distribution/issues/42)
- [ ] create a new repo named `camunda-docker-compose` and move Docker Compose files to it
- [ ] ensure that the new name is used in the official docs
- [ ] ensure we communicate the chage part of the 8.5 patch releases blog posts (3 posts at least)
- [ ] ensure that we announce the change part of the 8.6 release blog post

I will work on this once all the 8.5 changes are merged into the main branch.

The rename will not happen in 8.5 but for 8.6

This change will need a lot work so I've changed it as an epic and added some tasks for it.
