[TASK] Refactor Identity config #2403

Overview

Identity still has some env vars that could be moved to the config. So, we need to refactor and move them.

Also:

In some places, the connectors and zeebe client/audience are hard coded. https://github.com/camunda/camunda-platform-helm/blob/2b161557735ee2a6aaabe88dac26266e52d4b831/charts/camunda-platform-8.6/templates/identity/deployment.yaml#L173
