Create automated tests for the "head and neck" datasets. This PR:

Creates a test_load.py test file that tests whether GDC data can be loaded and transformed into CRDCH instance data.
Adds a GitHub Action for running all Python tests using pytest.
Updates ccdhmodel files to the latest build.
Includes example JSON-LD and Turtle files listing diagnoses in from this dataset.

Closes #8.
