This PR will switch the example data notebooks from using enumerations to codable concepts for #27

@turbomam Just to clarify, do you want some general feedback on this PR? I could try to give you more specific feedback, but since it's still marked as draft, I guess it's not ready for that yet?

I edited GDC to CCDH conversion.ipynb in this PR, but maybe that should be left out for now?

My current interest in merging this PR is providing a test case for https://github.com/linkml/linkml/issues/463
