refactor: create / update / remove enums in schemas #430

Addresses #162 for main branch . I will use the molecule context enum in #428

Notes:

Expanded TokenType
Created AltType for alteration types
Remove ProteinTerminationClassifier since it was not used
Remove TokenMatchType since it was not necessary
Rename GeneMatchToken to GeneToken
Remove LookupType since it was not used
