Add missing images configurations to Knative charms in 1.8 airgapped deployment script #925

Context

Based on issues https://github.com/canonical/knative-operators/issues/183 and https://github.com/canonical/knative-operators/issues/185 , there are some images we missed to configure in knative-serving and knative-eventing charms. We need to add these mentioned in the issues above to the 1.8 airgapped deployment script.

What needs to get done

  1. Add missing images to knative-eventing
  2. Add missing images to knative-serving

Definition of Done

1.8 deployment script is updated with the above configurations
