chore(ui-shell): update `company` prop description in `Header` #1770

Fast-follow to #1764

Applies the updated prop description for company to reflect that it's now slottable.

This PR does not count as a fix as the changes in #1764 have not yet been released.

The other PR had a few other fixes, e.g. platformName is also missing backticks around the tags.
