Context

The Cardano service dependencies and configuration needs updating. Supersedes #783

update to ogmios@v5.5.8, cardano-node@1.35.5, and cardano-db-sync@13.1.0.0
bump cardano configurations
update to the latest cardano-db-sync mainnet snapshot.
update to Docker Compose v2
