Logging improvements and code tidying

It was pointed out on Discord request payloads causing issues when the Accept is set to application/json and an attachment is additionally provided.

• This has been resolved in this PR.

Additional logging has been added to this PR as well to make it easier to troubleshoot from the serverside.
