Tidyverse fix #52

Trying this again to see if the checks still fail...

Removed all (I hope) instances of requiring tidyverse. Replaced with dplyr and ggplot2. There might be some places where we end up needing tidyr or stringr or similar; let's add those as they come up.

The goal of this is to hopefully make the GH actions checks run a little faster when the website builds, so it doesn't have to reinstall the entire tidyverse every time.

What does this mean? If you have source files that require output and figures to be generated (e.g. R Markdown), then it is important to make sure the generated figures and output are reproducible. This output provides a way for you to inspect the output in a diff-friendly manner so that it's easy to see the changes that occur due to new software versions or randomisation.
