Fix image file paths and captions #426

Some of the images were still pointing to olf locations for their source files since the Workbench transition.

Zhian made the Workbench infrastructure very permissive on internal links and image paths. See https://carpentries.github.io/sandpaper-docs/episodes.html#internal-links
