Add one additional book to the list

Simon's recently published book is free and comes with colab notebooks to work through each chapter. I think this book is the right level of difficulty for many people who take the Intro DL workshop. It also has some important chapters on more modern concepts, including the double descent phenomenon.

What does this mean?
