Summary of changes:

Closes #43.
Swaps the numpy.percentile method for xarray.quantile.
Moves the NumPy method to the callout block below.
Rename callout block.

thanks for this @vinisalazar ! I added a bit to the tip description to reference the xarray method that is used now and I think it is good to merge if you do.
