2021 10 upgrade template #5

@tompollard here is the pull request that brings the latest changes to the lesson template. Because of the way the template feature works in GitHub, it forgets all the previous history of the repository, so this PR brings most of the commits from the lesson template which is why it's so large. We will soon have a better mechanism for these updates. Let me know if you have any other questions! Thanks

This is great, thanks @fmichonneau, looks good to me. I don't have merge permissions, so if possible please could you go ahead and merge? I can then rebase the other pull requests on top.

(as a side thought, an alternative is to just regenerate the repo from the latest version of the template. we haven't yet added content, so this would also be fine).
