Ep 3: Remove EcodataScience from lesson #41

I don't have anything against them, however, we should just stick to one timeline per lesson. I know we're trying to reinforce this is how to make a timeline, but actual implementation in the lesson time is unrealistic.

So let's edit the lesson to be all bjules and (maybe) UCSBlibrary.

ecodatascience will remain just as an option for the challenge in episode 2.
