Avoid label fatigue/overload (from old PR) #204

This is based on an old issue in the old handbook (https://github.com/carpentries/docs.carpentries.org/pull/134). Opening this as an issue here to consider for the new handbook.

We have been teaching about these labels in Collaborative Lesson Development Training to a largely positive response. My feeling is that we do not need to change these labels. If we receive any feedback from current Maintainers raising similar concerns to those in the original issue, I will re-open this and re-start a discussion with Maintainers about what set of labels would be more appropriate.
