We generally do not record during workshops because we want trainees to all feel free to share during discussions.
What other than videos, might be more helpful for you?
This discussion prompted me to look on YouTube and I discovered recordings of Carpentries workshops, e.g., https://www.youtube.com/watch?v=YHDvqPRM9tE. A few of these might be curated and provided as a resource, serving as a step between training and teaching a workshop.
@erinshawusc that link to an example Carpentries workshop could be added to the overview section of the welcome episode as a callout. Would you like to make a PR for that?

As a trainee, I found the Carpentries Instructor Training workshop very informative. Lots of material has been covered. My suggestion would be to provide the trainees with something more informative than a link to the Etherpad notes associated with the specific training workshop, i.e. a webpage with at least part of the video clips from that training etc. that complement already existing https://carpentries.github.io/instructor-training/ summary page.
